Stealthy Beef and Veggies Bolognese

Having trouble getting the kids to polish off those vegetables? Our stealthy beef and veggies bolognese is a great way of helping them get their 5-a-day – and they’ll be none the wiser! Serves 2. Double up on ingredients for 4 portions.

What You’ll Need:

Splash of olive oil for frying (about 1 tbsp)
3/4 cup of our locally reared beef mince
2 medium red onions, finely chopped or pureed
1 red pepper, finely chopped or pureed
2 carrots finely chopped, or pureed
1 courgette finely chopped or pureed
1 can of chopped tomatoes
1/2 tsp of dried oregano
1/2 tsp of dried basil or a couple of fresh leaves
150g spaghetti or tagliatelle

What to Do:

Add the olive oil into a large pan at a medium heat, and brown the beef. Remove beef from the pan and set aside, and brown the veggies in the pan. These can then be pureed if necessary.

Combine the chopped or pureed veggies in the pan with the beef, tinned tomatoes, oregano, and dried basil if using. Simmer on a low heat, stirring occasionally, for about 20-30 minutes. If your sauce gets too thick, try adding a couple of spoonfuls of water and stirring in.

Cook your pasta according to the instructions on the packet and drain.

You can either plate up the pasta and top with the sauce, or toss it all together in the pan. Top with a little grated parmesan if it takes your fancy. Easy!
