Need some hearty comfort food to get you through the winter? Our glazed rack of lamb with spiced red onions and potatoes is guaranteed to indulge all your taste buds. With only a couple of healthy ingredients and these easy instructions, you can whip up a meal in no time that you and your family will love!

Serves 6 – half the recommended ingredient size to serve 3 if preferred.

Make a delicious meal with these simple ingredients:
β€’ 600g new potatoes cut in half
β€’ 3 red onions – each 1 to be cut into 6 wedges
β€’ 2 tsp blend of all coriander, paprika and ginger
β€’ 8 tbsp olive oil
β€’ 2 racks of lamb (French trimmed by us is preferred)
β€’ 1 tbsp pomegranate syrup (optional)
β€’ 2 tsp lemon thyme leaves

How to make it:

Heat oven to 200C/180C fan/gas 6 and put the potatoes and onions into a large roasting tin once cut and scatter over half of the coriander, paprika and ginger then drizzle with 2 tbsp of the oil. Make sure that all is mixed together and place in the oven for 40 mins to roast – feel free to mix throughout to ensure even cooking.

Heat 1 tbsp of oil in a frying pan and fry the fat side of the lamb well until the lamb is dark brown, then take of the pan.

Remove the roasted veg from the oven and season the lamb fat with the remaining spices, then brush over the pomegranate syrup if you wish to add an extra kick.
Place the lamb fat-side up, among the potatoes and return to the oven. Cook these for 20 mins for rare, 25 mins for pink and 30 mins for well done. Once cooked remove and leave to cool for 10 mins.

Whilst this is cooling, mix the lemon thyme leaves and the remaining olive oil.

To Serve:

Carve the racks into chops and place the contents from the roasting tin into servings with the lamb chops to one side. Drizzle everything with the lemon thyme oil and it’s good to go!
