Brazilian Coconut Curry
Fancy something different? Try this delicious Brazilian twist on a chicken curry!
INGREDIENTS
- 4 skinless, boneless chicken breasts chopped into chunks
 - 2 tbsp olive oil
 - 1 diced onion
 - 2 chopped jalapeno peppers
 - 2 minced garlic cloves
 - 3 chopped tomatoes
 - 1 tsp minced ginger
 - 1 tsp cumin
 - 1 tsp turmeric
 - 1 tsp coriander
 - 1 tsp cayenne pepper
 - 1 handful chopped parsley
 - 1 can coconut milk
 - Salt and pepper
 
INSTRUCTIONS
- Mix together the cumin, cayenne pepper, turmeric, and coriander, and add salt and pepper, to create your spice mixture.
 - Place the chicken in a bowl, and rub with the spice mixture.
 - Heat the olive oil in a pan, fry the chicken for 10 to 15 minutes, turning often. Remove chicken from pan and set aside.
 - Add an extra splash of oil to the pan if needed, add the onion, ginger, jalapeno peppers, and garlic and fry for 5 minutes. Add the tomatoes and cook for a further 5 minutes.
 - Stir in the coconut milk and add the chicken back to the mixture.
 - Serve and enjoy!
