Tropical Chicken Skewers
Ingredients
2 chicken breasts, cut into cubes
5 tbsp soy sauce
8 tbsp bbq sauce
2 tsp sesame oil
2 cloves garlic, minced
1 tbsp ginger
1 tsp honey
1 tbsp rice wine vinegar
1 tsp chilli flakes
2 peppers, colours of your choice
450g pineapple chunks
1 red onion, cut into segments
Coriander to serve
Method
- Preheat the grill to a medium heat
- In a bowl combine soy sauce, honey, vinegar, ginger, garlic and bbq sauce then season with salt and chilli flakes.
- Put the skewers together alternating the chicken, peppers, onion and pineapple.
- Place on a baking tray and pour over half the marinade.
- Put the skewers in the grill, brushing over the remaining marinade and turning every so often to cook and coat the skewers evenly.
- Cook for around ten minutes or until the chicken is cooked through.
- Serve with a sprinkle of coriander.
