Tropical Chicken Skewers

2 chicken breasts, cut into cubes

5 tbsp soy sauce

8 tbsp bbq sauce

2 tsp sesame oil

2 cloves garlic, minced

1 tbsp ginger

1 tsp honey

1 tbsp rice wine vinegar

1 tsp chilli flakes

2 peppers, colours of your choice

450g pineapple chunks

1 red onion, cut into segments

Coriander to serve


  1. Preheat the grill to a medium heat
  2. In a bowl combine soy sauce, honey, vinegar, ginger, garlic and bbq sauce then season with salt and chilli flakes.
  3. Put the skewers together alternating the chicken, peppers, onion and pineapple.
  4. Place on a baking tray and pour over half the marinade.
  5. Put the skewers in the grill, brushing over the remaining marinade and turning every so often to cook and coat the skewers evenly.
  6. Cook for around ten minutes or until the chicken is cooked through.
  7. Serve with a sprinkle of coriander.
