Easy Lamb and Feta Salad
Ingredients
1 large lamb steak
100g feta cheese
200g chips, homemade or cooked from frozen
150g roasted red peppers, jarred
2 tsp red wine vinegar
2 handfuls baby spinach
Handful mint leaves, chopped
Method
- Heat the oven and bake the chips until they are mostly cooked through.
- Meanwhile combine oil from the pepper jar with the red wine vinegar, mint and seasoning.
- Roughly tear the peppers into smaller chunks and place into a bowl with the feta and spinach.
- Heat a pan and brush the lamb with more of the pepper oil and season. Cook for 2-3 minutes on each side and leave to rest on a board.
- Once the chips are mostly cooked through, take them out the oven, chop them in half and toss with 1 tsp oil from the peppers and roast for a further 5 minutes.
- Thinly slice the lamb and toss the hot crispy chips through the salad with the feta dressing.
- Serve the salad with the sliced lamb placed on top.
