Balsamic Pork and Apples

Pork and apple is a match made in heaven the whole family will enjoy. And we’re confident that this mid-week winner combining balsamic pork and apples will soon become a well-loved classic in your household.

What You’ll Need:

4 pork loin steaks (all visible fat removed)

15g unsalted butter 

1tsp vegetable oil 

2 small red onions (cut into 8 wedges) 

2 red apples (cored and cut into thin wedges) 

Balsamic marinade:

100ml balsamic vinegar

2tsp honey 

2tsp dried thyme 

Method:

  1. In a dish, mix the vinegar with the honey and herbs adding salt and pepper to taste. Add the pork to the dish and coat on all sides. Cover and put aside. 
  2. Heat the butter and oil in a large non-stick frying pan. Add the onions and fry for 2-3 minutes, stirring occasionally. Throw in the apple slices and cook for 2 minutes until both the apple and onion has started to caramelise. Then, remove from the pan.
  3. Drain the pork from the marinade and leave it to one side. Cook the pork in the same pan for around 4-5 minutes on a medium heat, turn then add the onions, apples and reserved marinated. Cook for 4-5 more minutes, or until the juices from the pork run clear. 
  4. Serve with the pork, onions and apples with seasonal vegetables for 4 people.Â
