Brazilian Coconut Curry

Fancy something different? Try this delicious Brazilian twist on a chicken curry!


  • 4 skinless, boneless chicken breasts chopped into chunks
  • 2 tbsp olive oil
  • 1 diced onion
  • 2 chopped jalapeno peppers
  • 2 minced garlic cloves
  • 3 chopped tomatoes
  • 1 tsp minced ginger
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1 tsp coriander
  • 1 tsp cayenne pepper
  • 1 handful chopped parsley
  • 1 can coconut milk
  • Salt and pepper



  1. Mix together the cumin, cayenne pepper, turmeric, and coriander, and add salt and pepper, to create your spice mixture.
  2. Place the chicken in a bowl, and rub with the spice mixture.
  3. Heat the olive oil in a pan, fry the chicken for 10 to 15 minutes, turning often. Remove chicken from pan and set aside.
  4. Add an extra splash of oil to the pan if needed, add the onion, ginger, jalapeno peppers, and garlic and fry for 5 minutes. Add the tomatoes and cook for a further 5 minutes.
  5. Stir in the coconut milk and add the chicken back to the mixture.
  6. Serve and enjoy!
