Chicken and Chorizo Paella
Transport yourself to the port of Valencia with this delicious traditional Spanish dish!
INGREDIENTS
- 300g paella rice
- 100g frozen peas
- 200g peeled and cooked prawns, frozen
- 70g chorizo, chopped
- 2 chicken thighs, chopped
- 1 chicken stock cube
- 1 chopped onion
- 1 chopped red bell pepper
- 1 lemon, cut into wedges
- 3 tablespoons olive oil
- 1 tablespoon tomato puree
- 1 tablespoon paprika
- 2 cloves garlic, peeled and chopped
- 1 handful chopped parsley
- 750ml water
INSTRUCTIONS
- Heat the olive oil in a large paella pan, and add the chicken and chorizo.
- Add the garlic, parsley, paprika and onion, and fry for 5 minutes.
- Add the bell pepper and fry for another 20 minutes.
- Add the tomato puree, stock cube and rice, and season with salt and pepper.
- Stir in the water, bring the mixture to the boil, and simmer for 15 minutes.
- Add the peas and prawns, and cook until they are hot.
- Serve with lemon wedges to garnish- and enjoy!
