Delectable roasted chicken breast with pancetta and thyme for your valentine

Treat you’re your loved one to a romantic meal this valentine’s day! Using fresh herbs, fresh leeks, and our quality chicken breasts you can cook a delicious meal for two. Follow these super easy steps and you will be amazed by this mouth-watering dish you can cook in just 45 minutes!

• 2 chicken breasts
• 2 large leeks
• a few sprigs fresh thyme
• 2 good lug olive oil
• 2 pinch sea salt
• 2 pinches of freshly ground black pepper
• 2 small swig white wine
• 8 slices of pancetta
• olive oil


Preheat the oven to 200°C/400°F/gas 6.

Remove the skin of the chicken breasts and put into a bowl then trim and wash the leeks, making sure to remove the outer leaves, then slice it into quarter pieces. Add these to the bowl with the fresh thyme, a good lug of olive oil, a pinch of sea salt and freshly ground black pepper.

If you wish to, add in the white wine, and mix these all together in the bowl.

Place your leek and flavourings from the bowl into the tray, then wrap the two chicken breasts in 4 slices of pancetta each – this will flavour the chicken and protect it while it cooks!

Lastly, drizzle with olive oil and place a couple of whole thyme sprigs on top and cook in the middle of the oven for 25 to 35 minutes. That’s it!


Try and bend the sides of the tray in towards the chicken so the leeks don’t burn during cooking. Once cooked, simply dishes the food onto plates and enjoy with the finest white wine.
