Who doesn’t love a burger? As part of a BBQ or comforting dinner, burgers are a family-friendly meal everyone loves. For this recipe, we’ve taken a family friendly favourite and made it healthier with the help of turkey mince.

Ingredients

500g turkey mince

1tbsp olive oil

1 onion (chopped)

Zest of 1 lemon

4 tbsp ready-made salsa

1/2 pepper (deseeded and diced)

4 rolls

70g rocket

4tbsp houmous

Method

  1. Add the olive oil to a frying pan over a medium heat. Slide in the onions and cook for 5 minutes until soft and translucent. Then, put them to one side and allow them to cool.
  2. Put the mince in a large mixing bowl and season with a generous grating of pepper. Then, mix in the onion and lemon zest before shaping the mixture into 4 patties.
  3. Cook on each side for 5-7 minutes. This can either be done under the grill, on a griddle or in a frying pan. Whichever you choose make sure the burgers are cooked through and no pink meat remains.
  4. Meanwhile, mix the salsa with the diced pepper.
  5. When the burgers are cooked, slice the rolls and sandwich the burger between the two halves. Add rocket leaves, a spoonful of salsa and a healthy dollop of houmous before serving.
