Devilish Pumpkin & Chicken Tray Bake
We couldn’t resist trying one more pumpkin based recipe before October is over…
INGREDIENTS
8 chicken drumsticks
500g pumpkin, peeled & chopped into wedges
1 onion, chopped into wedges
227g water chestnut slices, drained
5 tbsp hoisin sauce
1 tbsp soy sauce
200g jasmine rice
Spring onion to garnish
INSTRUCTIONS
- Preheat oven to 200°C & line a tray with baking paper.
- Place chicken, onion, pumpkin and water chestnuts on the tray.
- Combine hoisin and soy sauce in a bowl and pour over ingredients in the tray- tossing them to ensure they’re coated evenly.
- Bake for around 30 minutes, checking that the chicken is cooked through.
- Serve with rice and spring onion- enjoy!
