Festive Ham Quesadillas
Ingredients
Leftover ham
Large flour tortillas
Cheddar or any other hard cheese
4 tbsp white wine vinegar
1 small red onion
2 tbsp golden caster sugar
Pinch of chilli flakes
1 star anise
Handful of mint leaves
Small knob of butter
Method
- To make a pickled onion to accompany, heat the vinegar, spices and sugar in a small pan with 4 tbsp water until the sugar dissolves.
- Strain the liquid over the onion and leave it to pickle for a minimum of 20 mins. Leave longer for a softer, more pickled onion.
- Spread the ham evenly over one of the tortillas and cover with cheese.
- Spoon over some of the onions and cover with another tortilla.
- Heat a small amount of butter in a non-stick pan and slide in the quesadilla when it is foaming.
- Cook on a low heat, pressing with a spatula until the base is golden.
- Turn the quesadilla and add another small amount of butter to the pan.
- Chop into wedges and serve with a sprinkling of mint.
