Festive Ham Quesadillas

Leftover ham

Large flour tortillas

Cheddar or any other hard cheese

4 tbsp white wine vinegar

1 small red onion

2 tbsp golden caster sugar

Pinch of chilli flakes

1 star anise

Handful of mint leaves

Small knob of butter


  1. To make a pickled onion to accompany, heat the vinegar, spices and sugar in a small pan with 4 tbsp water until the sugar dissolves.
  2. Strain the liquid over the onion and leave it to pickle for a minimum of 20 mins. Leave longer for a softer, more pickled onion.
  3. Spread the ham evenly over one of the tortillas and cover with cheese.
  4. Spoon over some of the onions and cover with another tortilla.
  5. Heat a small amount of butter in a non-stick pan and slide in the quesadilla when it is foaming.
  6. Cook on a low heat, pressing with a spatula until the base is golden.
  7. Turn the quesadilla and add another small amount of butter to the pan.
  8. Chop into wedges and serve with a sprinkling of mint.
