Guilt Free Kentucky Fried Chicken Fakeaway

It’s Fast Food Day! But we’re shaking things up this year without guilt-free Kentucky fried chicken fakeaway recipe. The best thing about it is you can easily pair it with corn on the cob and homemade chips for a healthy twist on a classic that’s friendly on your bank account too! 

Serves: 4

What You’ll Need:

For the spice mix: 

1/2 tbsp salt 

1tbsp peppercorns 

½ tbsp dried onion flakes 

1tbsp paprika 

1tbsp dried garlic granules 

1tbsp dried rosemary 

½ tbsp dried oregano

1/2 tbsp mustard seeds 

1tsp dried thyme 

1tsp dried tarragon 

For the chicken: 

2 large chicken breasts 

1 egg (beaten)

1tsp olive oil 

1tbsp of spice mix 

25g breadcrumbs 

Method:

For the spice mix: 

  1. Place all of the ingredients into your food processor or mini chopper and pulse until the mixture reaches a fine powder

For the chicken: 

  1. Preheat oven to 180C 
  2. Take your spice mix and combine with breadcrumbs in a bowl 
  3. Cut each chicken breast into slices 
  4. Dip chicken into egg, then roll around in the spice and breadcrumb mix 
  5. Put on a baking tray that has been coated in olive oil and drizzle a little more over the chicken. 
  6. Cook for 25-30 minutes, turning halfway through cooking

You can also use chicken drumsticks or pieces for this recipe. Just make sure you cook them in the oven for the appropriate amount of time and always ensure they are cooked through!
