Jack-O’-Lantern Chicken and Sweet Potato Potpies
INGREDIENTS
2 tbsp. Olive oil
2 Large Sweet Potatoes
1 Large Onion
35g of all-purpose flour
120ml of dry white wine
475ml of chicken broth
1 small (cooked) chicken
Sprigs of Parsley
tsp. grated or ground nutmeg
2 sheets of frozen puff pastry
1 large egg
Salt and pepper
METHOD
Step 1. Heat the oven to 190c and oil 5 to 8 ramekins.
Step 2. Heat the oil in a large skillet, adding the chopped sweet potatoes, onion, salt, and pepper. Cover and stir occasionally, and allow cooking until tender.
Step 3. Stir in the flour and cook for a minute, gradually adding the wine, and broth and allowing the mix to boil.
Step 4. Add the roughly chopped chicken, parsley, and nutmeg.
Step 5. Divide the mixture between your ramekins, and place them onto a rimmed baking sheet.
Step 6. Using a festive cookie cutter, shape your pastry to a Halloween theme, and place the pastry over each ramekin, brushing them with the egg.
Step 7. Bake until puffed and golden brown for around 20-25 minutes and enjoy!
