Pork Coconut Curry
INGREDIENTS
- 4 pork loin steaks
- 3 tbsp vegetable oil
- 3 tbsp sesame oil
- 4 tbsp soy sauce
- 2 tbsp curry powder
- 2 red onions, chopped into chunks
- 350 ml chicken stock
- 1 tin light coconut milk
- 4 pak choi, chopped into quarters
- Juice from 2 limes
INSTRUCTIONS
- Heat half of the oil in a pan and fry the onions for around 6-7 minutes, add the curry powder and then fry for a further 2 minutes.
- Stir in the coconut milk and stock, simmer on a low heat.
- Heat the remaining oil in a second pan and fry the pork for around 5 minutes on each side- until golden brown, then remove from the pan and cover to keep warm.
- Stir the soy sauce, lime juice and sesame oil into the coconut milk mixture, add the pak choi and then continue to simmer for a further 5 minutes.
- Slice the pork steaks into thick strips and top with the mixture.
- Serve with steamed rice- enjoy!
