Pork Coconut Curry

INGREDIENTS

  • 4 pork loin steaks
  • 3 tbsp vegetable oil
  • 3 tbsp sesame oil
  • 4 tbsp soy sauce 
  • 2 tbsp curry powder 
  • 2 red onions, chopped into chunks 
  • 350 ml chicken stock
  • 1 tin light coconut milk
  • 4 pak choi, chopped into quarters
  • Juice from 2 limes

 

 

INSTRUCTIONS

  1. Heat half of the oil in a pan and fry the onions for around 6-7 minutes, add the curry powder and then fry for a further 2 minutes. 
  2. Stir in the coconut milk and stock, simmer on a low heat. 
  3. Heat the remaining oil in a second pan and fry the pork for around 5 minutes on each side- until golden brown, then remove from the pan and cover to keep warm. 
  4. Stir the soy sauce, lime juice and sesame oil into the coconut milk mixture, add the pak choi and then continue to simmer for a further 5 minutes. 
  5. Slice the pork steaks into thick strips and top with the mixture.
  6. Serve with steamed rice- enjoy!
