Pork Skewers with Flatbreads

400g lean pork shoulder

2 red peppers

½ cucumber

1 garlic clove

1 tbsp olive oil 

1 lemon

½ tsp hot paprika 

100 ml fat-free yogurt

½ tbsp dried oregano 

2 little gem lettuce


  1. Cut up the pork into bite size pieces and mix in a bowl with oil, lemon zest and juice, oregano, paprika and a pinch of salt. Marinate for at least 10 minutes.
  2. Mix the yogurt, garlic and cucumber together and season with salt.
  3. Put the grill on a high heat. Skewer the pork and peppers alternately and place under the grill under cooked through and golden brown.
  4. Serve with warmed flatbreads, lettuce and yogurt mixture.
