Portuguese Piri-Piri Chicken

Spice things up with this tasty, homemade piri-piri chicken…


  • 1 spatchcocked whole chicken
  • 100 ml olive oil
  • 50 ml red wine vinegar
  • 10 chopped red chillies
  • 1 tbsp chopped garlic
  • ½ tsp oregano
  • ½ tsp paprika
  • Salt and pepper to season



  1. Preheat the oven to 180°C.
  2. Roast the chillies in the oven for around 10 minutes.
  3. Warm the olive oil in a pan and add the chillies, garlic, oregano, paprika, and vinegar, simmer for a few minutes.
  4. Once the mixture has cooled, blend it together.
  5. Place the spatchcocked chicken in a plastic food bag, cover the chicken evenly with half of the blended mixture and marinate in the fridge for 1 hour.
  6. Preheat the oven to 200°C and heat a griddle plan on the hob.
  7. Season the chicken with salt and pepper and cook it on the griddle for a couple of minutes on each side, until browned.
  8. Transfer the chicken to the oven and roast for around 30 minutes.
  9. Serve with the remaining blended mixture, chips, and salad- enjoy!
