Portuguese Piri-Piri Chicken
Spice things up with this tasty, homemade piri-piri chicken…
INGREDIENTS
- 1 spatchcocked whole chicken
- 100 ml olive oil
- 50 ml red wine vinegar
- 10 chopped red chillies
- 1 tbsp chopped garlic
- ½ tsp oregano
- ½ tsp paprika
- Salt and pepper to season
INSTRUCTIONS
- Preheat the oven to 180°C.
- Roast the chillies in the oven for around 10 minutes.
- Warm the olive oil in a pan and add the chillies, garlic, oregano, paprika, and vinegar, simmer for a few minutes.
- Once the mixture has cooled, blend it together.
- Place the spatchcocked chicken in a plastic food bag, cover the chicken evenly with half of the blended mixture and marinate in the fridge for 1 hour.
- Preheat the oven to 200°C and heat a griddle plan on the hob.
- Season the chicken with salt and pepper and cook it on the griddle for a couple of minutes on each side, until browned.
- Transfer the chicken to the oven and roast for around 30 minutes.
- Serve with the remaining blended mixture, chips, and salad- enjoy!
