Pulled Chicken Quesadillas
Ingredients
500g chicken breast
1 red onion
2 peppers
2 tsp cajun seasoning
1 tsp chili flakes
1 tsp cayenne pepper
2 tsp ground paprika
1 tsp dried mixed herbs
200g chopped tomatoes
200 ml water
8 tortillas
3 tbsp olive oil
Grated mozzarella cheese
3 spring onions
Salt and pepper
Method
- Marinate chicken, onions and peppers with all the spices and a drizzle of olive oil for at least 1 hour.
- Fry the chicken, then remove from the pan and shred using a couple of forks. Set aside.
- Add the onions and peppers to the pan and fry for a few minutes.
- Mix in the chopped tomatoes, water and chicken.
- Simmer for around half an hour until most of the moisture has evaporated. Remove from the heat.
- Dip the tortilla in the sauce and pan fry with a bit of oil, adding the mixture, cheese and some spring onion. Place another tortilla on top and flip to cook the other side.
- Cut into quarters and serve.
