Pulled Chicken Quesadillas

500g chicken breast

1 red onion

2 peppers

2 tsp cajun seasoning

1 tsp chili flakes

1 tsp cayenne pepper

2 tsp ground paprika

1 tsp dried mixed herbs

200g chopped tomatoes 

200 ml water

8 tortillas

3 tbsp olive oil

Grated mozzarella cheese

3 spring onions

Salt and pepper


  1. Marinate chicken, onions and peppers with all the spices and a drizzle of olive oil for at least 1 hour.
  2. Fry the chicken, then remove from the pan and shred using a couple of forks. Set aside.
  3. Add the onions and peppers to the pan and fry for a few minutes.
  4. Mix in the chopped tomatoes, water and chicken.
  5. Simmer for around half an hour until most of the moisture has evaporated. Remove from the heat.
  6. Dip the tortilla in the sauce and pan fry with a bit of oil, adding the mixture, cheese and some spring onion. Place another tortilla on top and flip to cook the other side.
  7. Cut into quarters and serve.
