Roasted Rack of Lamb
Preparing a roasted rack of lamb can seem daunting, but with our step by step instructions, you’re guaranteed a perfect roast every time!
What you’ll need:
1/2 cup of Fresh Breadcrumbs
2 tbsp of Minced Garlic
2 tbsp of fresh chopped Rosemary
1 tsp of Salt
1/4 tsp black pepper
2 tbsp of olive oil
1 tbsp of Dijon mustard
1 ( 7 bone) rack of lamb trimmed and frenched
What to do:
1. Preheat the Oven to 450 degrees F 230 degrees C Move oven rack to centre of oven
2. In large bowl combine breadcrumbs, garlic, rosemary, 1teaspoon salt, 1/4 teaspoon Blak pepper , 2 tablespoons of Olive oil to moisten
mixture. Set aside.
3. Season the Rack all over with additional Salt and pepper, Heat an additional 2 tablespoons of olive oil in a large frying pan or dish over a high heat.
4. Sear Rack of Lamb for 2 minutes on all sides, set aside for 2 minutes.
5. Brush rack of lamb with the mustard, roll in the breadcrumb mixture until evenly coated, cover the ends of the bones with foil to prevent charring
6. Arrange the rack bone side down in the dish , roast the lamb for 12-18 minutes, depending on how well done you like the meat.
7. With a meat thermometer take a reading of the centre of the meat after 10-12 minutes, remove the meat from the pan, or let it cook further depending on your taste.
Let it rest for 5- 7 minutes before carving the ribs.
