Sausage and Swede Traybake
Ingredients
8 pork sausages
2 red onions
3 eating apples e.g. Granny Smith or Pink Lady, cored and cut into wedges
1 large swede
2 tsp red wine vinegar
1 tbsp olive oil
2 tbsp maple syrup
1 tsp cumin seeds
1/2 small pack of thyme
Broccoli to serve (optional)
Method
- Preheat the oven to 200C / gas mark 6.
- Mix the oil, cumin, thyme leaves, maple syrup and red wine vinegar with seasoning in a large roasting tin.
- Throw in the swede and onions and coat well in the mixture, before placing in the oven for 15 minutes.
- Add the apple wedges and sausages and cook for a further 30-45 mins, stirring halfway through.
- Serve when the vegetables are soft and the sausages are cooked through.
