Sausage and Swede Traybake

8 pork sausages

2 red onions

3 eating apples e.g. Granny Smith or Pink Lady, cored and cut into wedges

1 large swede

2 tsp red wine vinegar

1 tbsp olive oil

2 tbsp maple syrup

1 tsp cumin seeds

1/2 small pack of thyme

Broccoli to serve (optional)


  1. Preheat the oven to 200C / gas mark 6.
  2. Mix the oil, cumin, thyme leaves, maple syrup and red wine vinegar with seasoning in a large roasting tin.
  3. Throw in the swede and onions and coat well in the mixture, before placing in the oven for 15 minutes.
  4. Add the apple wedges and sausages and cook for a further 30-45 mins, stirring halfway through.
  5. Serve when the vegetables are soft and the sausages are cooked through.
