Spiced Chicken Thighs with Sweet Potatoes
Ingredients
6-8 chicken thighs, with skin on
3 large sweet potatoes, peeled and chopped into large chunks
2 red onions, quartered
25g piri-piri spice mix
300g long-stem broccoli
Method
- Heat the oven to 180C / gas mark 4.
- Mix with sweet potatoes with a good amount of oil and some seasoning in a large roasting tin.
- Move the potatoes to one end of the tin and repeat this process with the chicken and red onions at the other end of the tin, adding in the piri-piri spice mix.
- Put in the oven for 40 mins, combining everything halfway through.
- Add the broccoli with a drizzle of oil and seasoning, then roast for a further 10-15 mins.
- Remove the chicken, onions and broccoli from the tin and slightly mash the potatoes with a fork.
- Plate up or serve from the tin in the middle of the table.
