Spiced Chicken Thighs with Sweet Potatoes

6-8 chicken thighs, with skin on

3 large sweet potatoes, peeled and chopped into large chunks

2 red onions, quartered

25g piri-piri spice mix

300g long-stem broccoli


  1. Heat the oven to 180C / gas mark 4.
  2. Mix with sweet potatoes with a good amount of oil and some seasoning in a large roasting tin.
  3. Move the potatoes to one end of the tin and repeat this process with the chicken and red onions at the other end of the tin, adding in the piri-piri spice mix.
  4. Put in the oven for 40 mins, combining everything halfway through.
  5. Add the broccoli with a drizzle of oil and seasoning, then roast for a further 10-15 mins.
  6. Remove the chicken, onions and broccoli from the tin and slightly mash the potatoes with a fork.
  7. Plate up or serve from the tin in the middle of the table.
