Spooky Sausage & Pumpkin Roast

Wondering what to do with your pumpkin carving leftovers? Why not try this delicious sausage & pumpkin roast for a tasty, autumnal treat…



Pork sausages

2 tbsp olive oil

1 tbsp caraway seeds

800g pumpkin, peeled & chopped into chunks

2 red onions, peeled chopped into chunks

Beef gravy to serve



  1. Preheat oven to 200°C.
  1. Put the ingredients into a roasting pan, toss to ensure they’re evenly coated in olive oil & roast for around 20 minutes.
  2. Warm the gravy and prep accompanying vegetables of your choice.
  3. Serve and enjoy!
