Sticky Apricot Chicken
Ingredients
500g chicken
250g apricot jam
1tbsp chilli sauce
1tbsp light soy sauce
1tbsp rice wine vinegar
2 spring onions, sliced
1 red pepper, sliced
1tbsp olive oil
Serve with your chosen rice
Method
- Heat the oil in a frying pan and cook with chicken until golden, removing from the pan when cooked.
- On a low heat, mix the jam, chilli sauce, soy sauce and vinegar, stirring until the mixture is sticky.
- Add the chicken back to the pan, along with the pepper and coat in the sauce thoroughly.
- Serve with the rice and sprinkle with the spring onions.
