Sticky Apricot Chicken

500g chicken

250g apricot jam

1tbsp chilli sauce

1tbsp light soy sauce

1tbsp rice wine vinegar

2 spring onions, sliced

1 red pepper, sliced

1tbsp olive oil

Serve with your chosen rice


  1. Heat the oil in a frying pan and cook with chicken until golden, removing from the pan when cooked.
  2. On a low heat, mix the jam, chilli sauce, soy sauce and vinegar, stirring until the mixture is sticky.
  3. Add the chicken back to the pan, along with the pepper and coat in the sauce thoroughly.
  4. Serve with the rice and sprinkle with the spring onions.
