Sweet and Sour Pork Skewers

700g pork tenderloin, cubed

1 pineapple, peeled, cored and cubed

1 red pepper, cut into squares

Bunch of spring onions, sliced

Salt and pepper

Extra-virgin olive oil

Sweet and sour sauce

120ml pineapple juice

60ml rice vinegar

3 tablespoons sugar

2 teaspoons cornflour

1 tablespoon soy sauce

1 teaspoon sriracha

2 tablespoons ketchup

1 garlic clove, crushed


  1. In a small pan, mix the pineapple juice with rice vinegar, ketchup, sriracha, soy sauce and garlic and bring to a simmer.
  2. Whisk together the sugar and cornflour in a small bowl and add to the pan, stirring well.
  3. Simmer until the sauce thickens and set aside.
  4. Arrange the pork, pineapple and pepper on the skewers alternating between them until the skewers are complete.
  5. Brush olive oil over both sides of the skewers and season with salt and pepper.
  6. Cook on a pre-heated grill until cooked through and charred on both sides.
  7. While the skewers are hot, coat with the sweet and sour sauce.
  8. Garnish with spring onions and serve with pittas and salad.
